Authors' comments: No meal in Armenia feels complete without a plate of fresh herbs and a pile of lavash. In Armenian, Persian, and often in Georgia and Azerbaijan, the herbs are used by each person eating to finish off the balance of a dish in an individual way. They can be added to a cheese and bread combination, tossed into a bowl a soup, or just eaten wrapped in bread. An herb plate on the table has become an easy and pleasurable accompaniment to many of our meals.
